Green Peas Gujiya Recipe (Matar Chi Karanji)
Green Peas Gujiya are a spicy variation of the traditional sweet form of Gujiyas. With a mouth watering taste, they make a delicious snack at teatime or as an appetizer.
Ingredients
- For the filling
- Green Peas - 3 cups
- Oil - 1 & 1/2 tbsp
- Mustard seeds - 1 tsp
- Aasafoetida (Hing) - 1/2 tsp
- Turmeric Powder - 1/2 tsp
- Sesame seeds - 3 tbsp
- Ginger paste - 1 tbsp
- Garlic paste - 1 tbsp
- Potatoes - 2 boiled
- Salt - To taste
- Green chili paste - To taste
- Dry Mango Powder (Amchur) - 1 & 1/2 tsp
- For cover
- Wheat flour (Ata) - 1 & 1/2 cups
- Gram flour (Besan) - 1/4 cup
- Rice flour - 1/4 cup
- Turmeric Powder - 1/2 tsp
- Oil - 2 tbsp and for frying
Instructions
For the filling :
- Grind 3 cups of green peas into a coarse mixture.
- Heat 1 & 1/2 tbsp oil in a pan and add 1 tsp mustard seeds, 1/2 tsp hing, and 1/2 tsp turmeric powder. Add 3 tbsp sesame seeds and stir till golden brown.
- Add 1 tbsp ginger paste and 1 tbsp garlic paste. Stir fry till brownish.
- Add 2 boiled potatoes cut into small pieces, and the ground peas. Mix well and add salt and green chili paste as per taste.
- Add 1 & 1/2 tsp amchur (dry mango powder). Mix well, reduce the heat to low, and let cook for about 10 minutes, turning occasionally, till the peas are soft and most of the moisture is absorbed. Then turn off the gas.
For the outer cover :
- Mix 1 & 1/2 cups wheat flour, 1/4 cup besan (gram flour), 1/4 cup rice flour, and 1/2 tsp turmeric powder.
- Heat 2 tbsp oil and add to it.
- Use water to knead into dough, that is not too soft.
- Divide the dough into small 1" pieces, roll them between your palms to make balls, and flatten them. Take one piece and roll into a thin circle about 3" in diameter.
- Place about 1 & 1/2 tsp of the filling in it. Now bring up one edge of the circle and fold into a semicircle, thus covering the filling. Press firmly along the edges to seal the filling inside.
- Trim the edges with a trimmer/cutter.
- Repeat for all the dough balls and the filling.
- Deep fry all dumplings in oil till golden brown.
- Serve hot with sweet tamarind chutney or ketchup.
