Beet Chi Koshimbir Recipe (Beetroot salad Recipe)
This recipe called 'beetroot chi koshimbir' in Marathi, is a Maharashtrian style salad that is very healthy and delicious accompaniment to any meal. Beetroot is a rice source of iron. Its natural color makes this salad very attractive. It is already sweet in taste, so you may choose to omit the added sugar from this beetroot salad recipe, but adding the lime/lemon juice is a must. Ingredients
- Beetroot - 1 small
- Coarsely ground roasted peanut* - 3 tbsp
- Salt - To taste
- Sugar - 1/4 tsp
- Lime / lemon juice - 3/4 tsp
- Onion - 1/4th (1 tbsp) finely chopped
Instructions
- Peel, wash and grate 1 small beetroot.
- Add 3 tbsp coarsely ground roasted peanut*, salt to taste, 1/4 tsp sugar, and 3/4 tsp lemon juice. Mix well.
- Just before serving, add 1/4th onion finely chopped.
- Mix and serve.
*Roast peanuts in a pan, on a medium flame, till some black spots start appearing on the outside. Let cool and then crush a little with hands to separate peels. Blow away the peels and grind the peanuts coarsely.
