Shakarpara Recipe

Shakarpara, known as 'shankarpali' in Marathi, is a lightly sweet delightful snack that can be enjoyed at teatime.

Ingredients

  • Milk - 1/2 cup
  • Sugar - 3/4 cup
  • Clarified butter (Ghee) - 1/2 cup
  • Gram flour (besan) - 1 tbsp
  • Semolina (Sooji) - 2 tsp
  • Sodium bicarbonate - a pinch
  • All purpose flour (Maida) - About 2 & 1/2 cups
  • Oil - For frying

Instructions

  1. Mix 1/2 cup milk, 3/4 cup sugar, and 1/2 cup ghee (clarified butter) in a vessel and bring to boil.
  2. When it cools a bit and is warm, add 1 tbsp besan, 2 tsp rawa (sooji), a pinch of soda (sodium bicarbonate), and as much maida (about 2 & 1/3 cups) as it can accommodate to make a dough. The dough should not be very soft. It should be just like the dough used to make puris.
  3. Divide the dough into about 2" to 2 & 1/2" big parts and roll them into balls.
  4. Roll one ball on a rolling board to make a 1/2 cm thick circle.
  5. With a cutter or a knife, cut into uniform squares.
  6. Heat oil in a pan and deep fry all the cut squares, on a low to medium flame, till you get a golden pink color.
  7. Repeat with all the dough balls.
