Potato-Pea Sandwich Recipe

A sure hit with the kids, this Potato-pea sandwich recipe is ideal for lunch boxes, for snack, or for picnics.

Ingredients

  • Potatoes - 2 boiled
  • Oil - 2 tsp
  • Mustard seeds - 1/2 tsp
  • Asafoetida (Hing) - a pinch
  • Turmeric Powder - 1/2 tsp
  • Curry leaves - 3-4
  • Onion - 2 tbsp finely chopped
  • Ginger paste - 1/4 tsp
  • Garlic paste - 1/2 tsp
  • Garam Masala - 1/2 tsp
  • Green peas - 1/2 cup coarsely ground
  • Dry mango powder (amchur) - 1/4 tsp
  • Salt - To taste
  • Red chili powder - To taste
  • Bread - 4 slices

Instructions

Filling :

  1. Take 2 boiled potatoes, peel and cut them into very small pieces.
  2. Heat 2 tsp oil in a pan, and add a. Let them crackle and then add a pinch of asfoetida (hing), 1/2 tsp turmeric powder, 3-4 curry leaves finely chopped, 2 tbsp finely chopped onion, 1/4 tsp ginger paste, 1/2 tsp garlic paste, and 1/2 tsp garam masala.

  3. Stir fry till the masala and the onion get nicely roasted. Add the cut potato, 1/2 cup coarsely ground green peas, and mix well. Reduce the heat.
  4. Add 1/4 tsp dry mango powder (amchur), and salt and red chili powder to taste. Mix well and turn off the gas in a minute.

Preparation :

  1. Take 2 slices of bread at a time and grease with some butter.
  2. Spread the filling evenly into about 1/2 cm thick layer, on one of the bread slices. Cover with the other slice. Grease the outer sides of the sandwich with some butter. Repeat with all the slices of bread.

  3. Grill using a grill toaster or a gas toaster.
  4. Cut diagonally into triangles and serve hot with ketchup.
