Potato-Pea Sandwich Recipe
A sure hit with the kids, this Potato-pea sandwich recipe is ideal for lunch boxes, for snack, or for picnics.
Ingredients
- Potatoes - 2 boiled
- Oil - 2 tsp
- Mustard seeds - 1/2 tsp
- Asafoetida (Hing) - a pinch
- Turmeric Powder - 1/2 tsp
- Curry leaves - 3-4
- Onion - 2 tbsp finely chopped
- Ginger paste - 1/4 tsp
- Garlic paste - 1/2 tsp
- Garam Masala - 1/2 tsp
- Green peas - 1/2 cup coarsely ground
- Dry mango powder (amchur) - 1/4 tsp
- Salt - To taste
- Red chili powder - To taste
- Bread - 4 slices
Instructions
Filling :
- Take 2 boiled potatoes, peel and cut them into very small pieces.
- Heat 2 tsp oil in a pan, and add a. Let them crackle and then add a pinch of asfoetida (hing), 1/2 tsp turmeric powder, 3-4 curry leaves finely chopped, 2 tbsp finely chopped onion, 1/4 tsp ginger paste, 1/2 tsp garlic paste, and 1/2 tsp garam masala.
- Stir fry till the masala and the onion get nicely roasted. Add the cut potato, 1/2 cup coarsely ground green peas, and mix well. Reduce the heat.
- Add 1/4 tsp dry mango powder (amchur), and salt and red chili powder to taste. Mix well and turn off the gas in a minute.
Preparation :
- Take 2 slices of bread at a time and grease with some butter.
- Spread the filling evenly into about 1/2 cm thick layer, on one of the bread slices. Cover with the other slice. Grease the outer sides of the sandwich with some butter. Repeat with all the slices of bread.
- Grill using a grill toaster or a gas toaster.
- Cut diagonally into triangles and serve hot with ketchup.
