Dates and Nuts Rolls Recipe

Ingredients

  • Pitted Dates - 1 and 1/4 cup
  • Cashews - 1/4 cup
  • Almonds - 1/4 cup
  • Pistachios - 1/4 cup
  • Clarified butter (Ghee) - 1 tsp
  • Sesame seeds/Poppy seeds - 1 & 1/2 tsp

Instructions

  1. Coarsely grind all the cashews, almonds and pistachios.
  2. If the dates are already refrigerated when stored, you can use them right away. But if they are at room temperature, refrigerate them for 1/2 to 1 hr so that they are cold. (The reason for using cold dates is so that they can be easily ground in the food processor, otherwise they are sticky and difficult to grind.)
  3. Use a food processor to grind the dates. Do not pause the processor in between but continue to grind until the dates for a lump.
  4. Heat ghee in a pan and add the ground nuts. Saute for a minute and keep aside in a kneading bowl.
  5. In the same pan, dry roast the sesame seeds or poppy seeds until golden brown and keep aside in a separate bowl.
  6. Mix the lump of dates with the nuts and knead nicely so that the nuts get completely embedded in the dates.
  7. Roll the lump into a small log and flatten the ends.
  8. Sprinkle the roasted sesame seeds/poppy seeds in a plate and roll each log in it.
  9. Keep the logs into the refrigerator for half to one hour and then cut into thick slices.
