Lauki (Bottle Gourd) With Gram Flour Recipe (Peeth Peroon Dudhi)
This is a dry preparation with bottle gourd or lauki. The gram flour adds to the taste and makes it dry and convenient to pack.
Ingredients
- Bottle gourd (Lauki) - 1 & 1/2 cup grated
- Oil - 1 tbsp
- Mustard seeds - 1/4 tsp
- Aasafoetida (Hing) - A pinch
- Turmeric Powder - 1/4 tsp
- Cumin Seeds - 1/4 tsp
- Salt - To taste
- Red chili powder - To taste
- Sugar - 1/2 tsp (optional)
Instructions
- Grate 1 & 1/2 cup bottle gourd or lauki, manually or with a food processor.
- Squeeze between palms to remove water from it.
- Heat 1 tbsp oil in a pan and add 1/4 tsp mustard seeds. After they crackle, add 1/4 tsp cumin seeds, a pinch of asafoetida (hing), and 1/4 tsp turmeric powder. Add all the grated gourd and mix well.
- Stir fry on a medium flame till most of the moisture is gone.
- Add salt and red chili powder to taste, 1/2 tsp sugar (optional), and 3 tbsp gram flour.
- Mix well and cover to cook for 2-3 minutes, turning occasionally. Then turn off the gas.
- Garnish with finely chopped coriander and serve with roti/chapati.
