Gajar Ka Halwa Recipe
Gajar ka halwa is a delicious dessert that is very easy to make. The orange color of the carrots make it very attractive too. To grate the carrots, I have used a manual grater instead of a food processor as the carrot strands that you get with a food processor are thicker than what you get with a manual grater. And thinner strands will make all the ingredients of the halwa blend together very nicely, and the halwa will be softer and tastier. In this recipe I have used milk, but you can also use khoya. However, in that case you will have to cook the grated carrots in water first, then roast on ghee, and then add the khoya and the sugar. If using khoya, add about 100 grams of khoya for 4 1/2 cups of grated carrots.
Ingredients
- Carrots - 4 & 1/2 cups (tightly packed) grated
- Clarified butter (Ghee) - 2 & 1/2 tbsp
- Milk - 3 cups
- Sugar - 3/4 cup
- Cardamom powder - 1/4 tsp
- Sliced almond or pistachio - For garnishing
Instructions
- Heat 2 & 1/2 tbsp of clarified butter in a pan and add the grated carrots.
- Stir fry for a minute or two and add 3 cups of milk.
- Keep the heat on medium and allow the carrots to cook in the milk, stirring every 5 minutes, till all the milk is used up. (If using khoya, boil and cook the grated carrots in water till soft. Then stir fry on clarified butter and add then add khoya, and mix. Then follow from step 5 onwards.)
- Once it starts getting thicker, reduce the heat to low and turn more frequently than before. Allow all the liquid part of the milk to be used up.
- Add 3/4 cup sugar. Adding the sugar will release some more water as the sugar melts.
- Allow to cook for 5 more minutes.
- Add 1/4 tsp (or to taste) cardamom powder, mix, and turn off the gas.
- When serving, garnish with sliced almonds or pistachio and serve hot gajar ka halwa as a delicious dessert!
