Phodnichi Poli Recipe

Phodnichi poli is a perfect way to use up any left over bread, roti or chapati ('Poli' in Marathi) from previous day.  This recipe can be enjoyed for breakfast or as an evening snack.

Ingredients

  • Left-over chapati (roti) - 2
  • Oil - 1 tbsp
  • Mustard seeds - 1/2 tsp
  • Asafoetida (Hing) - a pinch
  • Turmeric Powder - 1/2 tsp
  • Curry leaves - 4-5
  • Green chili - 1 slit vertically
  • Raw peanuts - 8-10
  • Salt - To raste
  • Red chili powder - To taste
  • Tomato - 1 cut into small pieces
  • Sugar - 1 tsp
  • Lime / lemon juice - 2 tsp
  • Coriander / Cilantro leaves - A bunch finely chopped
  • Thin sev (gram flour fritters) - As per liking

Instructions

  1. Coarsely grind any left-over chapati (roti)**.
  2. For 2 chapatis*, heat 1 tbsp oil in a pan. Add 1/2 tsp mustard seeds. When they crackle, add a pinch of asafoetida (hing), 1/2 tsp turmeric powder, and 4-5 curry leaves. Add 1 green chili slit vertically, and 8-10 peanuts. Stir fry.
  3. When the peanuts turn brownish, add 1 small onion, finely chopped. When the onion turns pinkish, add the ground chapati and reduce the heat.
  4. Add salt and red chili powder to taste, 1 tomato cut into small pieces, 1 tsp sugar, and 2 tsp lemon juice.
  5. Mix well and turn off the gas in 2 minutes.
  6. Garnish with finely chopped coriander and thin sev and serve hot.

* If the left-over chapati is not enough, you can add coarsely ground bread to it. **Instead of chapati you can use bread to make 'Bread Upma', in the same way.
